Simmering potato stew with a light spicy kick for the big hunger!
Ingredients:
500 g Poblano green, roasted, stalked, skinned and chopped
500g of boiled potatoes, peeled and diced
1 glass of corn kernels, drained
1 large onions, diced
2 garlic clove(s) crushed or finely chopped
3-4 tablespoons rapeseed oil
0.5 l of chicken broth
1 teaspoon oregano
Ground 1/2 teaspoon cumin
80g grated cheese, slightly melting eg. Mozzarella
Instructions:
Cook the onion in a medium saucepan in oil over medium heat until golden brown (about 5 minutes). Add garlic and simmer for another 1-2 minutes. Add chilies, potato cubes and corn. Fill with broth, season with oregano and cumin, stir well. Bring the pot contents to a boil, then reduce the temperature and simmer with the lid for about 30-45 minutes, or until the potatoes are cooked (fork test).
Serve hot, sprinkle some grated cheese into each plate as you like
