Tabasco - probably the most famous hot sauce in the world

It doesn't matter wherever you go in the world, you will find them in each supermarket: Tabasco sauce. The Tabasco brand has achieved what many hot sauce manufacturers dream of. Everyone knows this brand and it is available almost everywhere. All the more reason to take a closer look at the Tabasco success story.

The Tabasco Story

We are going on a trip to the USA of the 19th century. In a small town, more precisely on a small island called Avery Island, hot sauce history is made in 1868. Located in the state of Louisiana, the 9km² island has not attracted much attention so far. Undisputedly a beautiful place earth, a lot of nature and nice people. In the local Cajun slang it was called "Petite Anse" in English "Little Bay". But Mr. McIlhenny had more in mind for this little place. He began to grow chillies on Avery Island, eventually producing the first Tabasco Brand Pepper Sauce in 1868, ushering in a golden age for his McIlhenny company. Due to the good weather conditions (humid and warm climate), this place is particularly suitable for growing the Tabasco Chillies, which originally come from a region in Mexico called Tabasco. By the way, "Tabasco" means "land where the earth is hot and humid". Even today, the pods on Avery Island are personally inspected once a year by a member of the McIlhenny family. Sharp family tradition if you ask us! The original Tabasco sauce is still produced according to the same recipe as back then. It consists of three simple components: Fully ripe red chillies, spirit vinegar and a little salt. The chilli sauce is therefore a purely natural product. The company has been in family ownership for five generations. Respect, let's hope that our great-great-grandchildren will also take up the Pepperworld heritage :)

Tabasco production in four steps

  1. Step: A member of the McIlhennys inspects the pods for ripeness and fruitiness and selects the best plants for processing
  2. The seeds of these plants are dried and stored safely (in a safe!) in order to subsequently grow premium seedlings<
  3. after the plants are large enough, the chillies are harvested and mixed with exclusive Avery Island salt, the mash is then matured in oak barrels for up to three years
  4. Finally, the mature mash is mixed with spirit vinegar and left to stand for another four weeks

Here it shows again: Good things take time. 4 years later the hot sauce is finished, which may call itself Tabasco Sauce.
