Since when is the sweet mustard available?

The sweet mustard is an original German invention. The merchant Johann Conrad Develey invented this variant in 1854 in Bavaria. Originally, the spicy dip of French Dijon mustard, spirit vinegar, caramelized sugar and, to this day, unknown spice mixture. The new mustard is quickly becoming very popular, even at the Bavarian royal court, it is eaten, even at this time. The inventor of the sweet mustard died in 1886 in the Bavarian capital Munich.

Which ingredients sweeten the mustard?

As mentioned earlier, the original recipe includes caramelized sugar to achieve the desired sweetness. Meanwhile, there are countless modifications. In particularly noble variants, the sugar portion is replaced for example by the addition of honey, in less noble variants by sweetener. In addition, extra mustard seeds are sometimes added to the mixture which will also provide a sweeter taste of the finished spice.

What's the sweet mustard for?

Sweet mustard is traditionally part of a Bavarian breakfast, to which a hearty white sausage is known to be served. This is also the reason why sweet mustard is often referred to as "Bavarian mustard" or "Weißwurst mustard". Another, Bavarian meat product is Leberkäse, also called "Leberkas" by the locals, and it also tastes delicious with a sweet mustard. Of course, the condiment can also be used wherever conventional mustard would otherwise be used.
