Tapenade - a classic of Mediterranean cuisine!

In our latitudes, tapenades are not yet as well known as they should be, at least in our opinion. We are especially convinced by the authentic, Mediterranean taste of these olive pastes. In this article we will explain which ingredients go into a tapenade and how to use them correctly in the kitchen.    

What exactly is a tapenade?

When we originally talk about a tapenade, we mean a very tasty paste made from olives, anchovies, capers and other ingredients. Of course, the basic recipe can be changed according to taste and preference. However, an original tapenade must definitely contain olives. The word tapenade has become a synonym for other spreads without olives. In all probability, these tasty pastes originate in the south of France, more precisely in Provence. As the recipe for the spread is quick, simple and also very tasty, tapenades have now spread throughout the Mediterranean region. Beside French tapenades, there are also for example Spanish, Italian and Greek ones to buy. Depending on the region, the recipe can vary slightly, for example Greek tapenades often contain dried tomatoes, but not the original French recipe. In some parts of Italy and Spain, tapenades are also spiced up with fiery chillies - just the way we like it.

Tapenades can be made from both green and black olives. In our shop you will find both varieties of this fantastic spread. 

A delicious tapenade made from green olives is for example the "Crema Mediterranea". An olive paste couldn't be more authentic, as it is made in Calabria, the tip of Italy's boot. In addition to the green olives, this tapenade also includes finely chopped peperoncini, eggplants, artichokes and capers. However, a very special ingredient of this Mediterranean olive paste is chicory. This is a herb that grows frequently on (how could it be otherwise?) roadsides in Europe. The producer of the Crema Mediterranea is a renowned Italian institute that is engaged in all kinds of studies on chillies, and thus wants to establish the fiery fruit even further in Italy - the Accademia Italiana del Peperoncino in Diamante, Italy. 

The Crema Mediterranea has an even hotter sister - the "Crema di Peperoncino". On the Pepperworld severity scale, the Crema Mediterranea has an average severity of 5. In contrast, the Crema di Peperoncino is already in the upper third with a 7. The good thing is, you don't have to decide. We offer you the chili purees exclusively in a double pack. So you get two fiery Calabrian chili mashes with one order. There are many ways to use the original Italian pastes. For example, the authentic tapenades go well with pasta, meat, fish, vegetables and rice.

A very special tapenade comes from Azada. This paste made of black olives and black garlic is only rounded off with some salt and olive oil. In terms of taste, this Spanish tapenade is an excellent accompaniment to tapas, for example. By the way: Black garlic is not a different kind of garlic, but fermented, conventional garlic. During this fermentation, not only the colour of the garlic changes, but also the taste. Black garlic does not taste as hot as the untreated version. The taste reminds us more of fruit vinegar. But the best thing about black garlic is that the typical smell is absent the next day. This tapenade is of really good quality. The Spanish manufacturer Azada is known for the fact that the ingredients used are grown according to organic criteria and processed in the company's own mill. So you get an absolutely natural product.

Also from Azada is the tapenade of black olives and basil, which we provide for you in our shop. Due to the essential oils of basil, this tapenade version tastes very fresh and delicious. The Mediterranean taste is only rounded off by the addition of salt and some olive oil. Especially with fish and vegetables, the tapenade made of black olives and basil goes very well. 

The fiery tapenade made of black olives is especially delicious, which, thanks to the chillies, brings a slight pungency to the food and thus to life. The taste of the tapenade is only completed by extra virgin olive oil and a little salt. The Spanish manufacturer Azada spices up the tapas world with this tapenade.

Tapenades do not need to be heated before consumption, which is why the delicious pastes are ideal as a spread on bread, as a cold sauce or as a dip for vegetables or crackers. Furthermore, the tasty olive pastes can also serve as a basis for a Mediterranean dressing or as a filling for roulades. In terms of taste, this tapenade goes well with everything that Mediterranean cuisine has to offer. For example, pasta goes just as well with the Mediterranean olive pastes as vegetables. Try antipasti with the delicious "Crema Mediterranea". Our olive pastes from Pepperworld are also ideal with grilled meat and fish. The aromas of the Mediterranean olive pastes fit taste-wise but not exclusively into the kitchen of the Mediterranean region. If you are brave enough, try the tapenades for other, regional dishes.
