How does the Tellicherry pepper get its name?
This particular pepper speciality comes from the country of origin of pepper, India. More precisely, from the Periyar Nature Reserve in the state of Kerala. There, picturesquely situated on the Malabar Coast, lies the port city of Tellicherry. The city is therefore the name giver for Tellicherry pepper. Meanwhile the Tellicherry pepper is well known far beyond this region.

Why is that? The unique quality is due to the exceptional harvest and selection of Tellicherry pepper. The berries are harvested just before they are fully ripe, which is why the colour of the fruit is also slightly reddish. After the berries are dried, a very thorough hand selection is carried out. Only the pepper berries, which are still nice and thick, are finally selected. This special process even has its own name, it is called: TGSEB= Tellicherry Garbeld Special Extra Bold. Since only a small yield is obtained in this way each year, the Tellicherry pepper from India is a very exclusive product.
What dishes does the Tellicherry pepper go with?
The taste of this pepper variety is somewhat more intense than that of black pepper, but at the same time slightly nutty with a subtle tea aroma. This strong note goes very well with game dishes, but also all other kinds of meat harmonize wonderfully with this pepper. Another food to which this flavour goes well is dark poultry (for example ostrich). In general, Tellicherry pepper can be used anywhere where traditional black pepper is normally used. However, in order for the flavour of this pepper speciality to develop optimally, it must be ground or crushed. Only in this way can the essential oils really come into their own. The best way to do this is to use a standard pepper mill or a mortar.
