Cipolle Rosse is a traditional onion marmalade from Italy whose taste is simply fantastic. The basis for this jam is red Tropea onions. The onions from Sarubbi therefore belong in the original recipe. To preserve the red onions, they are soaked in vinegar water, sugar, spices and salt. This not only preserves the onions, but also flavors them.
