"The chilli pepper Piment d'Espelette has a long tradition. It comes from the French part of the Basque Country and is used there for powder and spice paste.
Christopher Columbus is said to have brought the original plant to his homeland.
The fruits are mainly processed into powder, which has become world-famous and is used in his homeland for almost everything, be it chorizo, the typical hard sausage, Basque ham or fruity chutney. Another national dish is Axoa, the Basque meat pan. Of course, in it too, in addition to veal, paprika, onions and herbs, Piment d'Espelette is processed.
The plant is robust, grows about 80 cm high and produces many red oblong fruits of about 5 - 12 cm. These ripen from green to red."
