What exactly is Chipotle?
Chipotle is a fiery specialty made from jalapeño chilli. The jalapeños must be ripe and dried for this process. Since Jalapeños are too meaty to air-dry, the mature pods of this variety, are traditionally dried by smoking in Mexico. For this process, in many parts of the South American country, even today some pits are dug. One of the two holes serves as a combustion chamber and is filled with wood. The preferred types of wood are mesquite and pecan, but occasionally the wood of fruit trees is used to produce the right smoke flavor. A second pit serves as a cooking chamber, in which the chilli peppers are placed on a rack. Both chambers are naturally connected by a tunnel. It is also important that the frame, in which the Jalapeños are located, is placed slightly above the tunnel, so that the smoke can rise well. The ready-smoked chilli peppers are then called chipotle, this term can be traced back to the Aztecs. In the Native American language, the dried chilies are called Pochili. Over time, the term Chipotle has emerged. Another, now also somewhat outdated spelling is Chilpotle. No matter what name is used, the refined jalapeños have a pleasantly smoky flavor. Other chilli varieties can be further processed through smoking in order to become Chipotle. The only important thing is that they are meaty and not too thin-walled, otherwise smoking does not work. The fleshier the pods of chilies are, the more difficult they can be to be air-dried. We recommend you at this point a special dehydrator. Strictly speaking, these smoked pods are not chipotle, as this name refers exclusively to ripened jalapeños. The smoking on your own grill also has some pitfalls. For example, it is very important that the temperature is not too hot but not too low either. Above 100 ° C, the chilies start to throw bubbles, as the residual moisture, in the water, logically starts to boil. At 60-70 ° C, the fire of the grill, on the other hand, can easily go out again. To achieve a good result, you also need to smoke the chilies for several hours or even days. This can, of course, be very tedious because of the special circumstances. The manufacturing process of Chipotle is very ancient!
As already indicated, the production of Chipotle originates from the land of the Aztecs, today Mexico. There, 9000-year-old finds are the best proof of the long tradition of smoking chilli. The aborigines of South America recognized that especially fleshy chilli varieties, such as the jalapenos, cannot be conserved in the traditional way under the sun and therefore sought an alternative to preserve the chilies. They found this solution to be smoking, the same principle that works well with meat and fish.
How do you use Chipotle correctly?
The specialty here is the smoky flavor, coupled with a pleasant heat. Many Mexican dishes are traditionally seasoned with chipotle. But also, in the TexMex kitchen of the US Southwest Chipotle is often used. Many chilli con carne recipes, for example, include chipotle.
