Chipotle - a smoky delicacy chilli!

This particular chilli product really should be a household must-have for every fan of spicy food. The following article describes the ancient Aztec specialty in more detail.

What exactly is Chipotle?

Chipotle is a fiery specialty made from jalapeño chilli. The jalapeños must be ripe and dried for this process. Since Jalapeños are too meaty to air-dry, the mature pods of this variety, are traditionally dried by smoking in Mexico. For this process, in many parts of the South American country, even today some pits are dug. One of the two holes serves as a combustion chamber and is filled with wood. The preferred types of wood are mesquite and pecan, but occasionally the wood of fruit trees is used to produce the right smoke flavor. A second pit serves as a cooking chamber, in which the chilli peppers are placed on a rack. Both chambers are naturally connected by a tunnel. It is also important that the frame, in which the Jalapeños are located, is placed slightly above the tunnel, so that the smoke can rise well. The ready-smoked chilli peppers are then called chipotle, this term can be traced back to the Aztecs. In the Native American language, the dried chilies are called Pochili. Over time, the term Chipotle has emerged. Another, now also somewhat outdated spelling is Chilpotle. No matter what name is used, the refined jalapeños have a pleasantly smoky flavor. Other chilli varieties can be further processed through smoking in order to become Chipotle. The only important thing is that they are meaty and not too thin-walled, otherwise smoking does not work. The fleshier the pods of chilies are, the more difficult they can be to be air-dried. We recommend you at this point a special dehydrator. Strictly speaking, these smoked pods are not chipotle, as this name refers exclusively to ripened jalapeños. The smoking on your own grill also has some pitfalls. For example, it is very important that the temperature is not too hot but not too low either. Above 100 ° C, the chilies start to throw bubbles, as the residual moisture, in the water, logically starts to boil. At 60-70 ° C, the fire of the grill, on the other hand, can easily go out again. To achieve a good result, you also need to smoke the chilies for several hours or even days. This can, of course, be very tedious because of the special circumstances. Thanks to the hot chilli God, there's our Pepperworld Hot Shop, where you can easily buy many great Chipotle products online! If you are still tempted to "transform" chilies into Chipotle, here is a good video from our friends at 0815BBQ for your own production of Chipotle:

The manufacturing process of Chipotle is very ancient!

As already indicated, the production of Chipotle originates from the land of the Aztecs, today Mexico. There, 9000-year-old finds are the best proof of the long tradition of smoking chilli. The aborigines of South America recognized that especially fleshy chilli varieties, such as the jalapenos, cannot be conserved in the traditional way under the sun and therefore sought an alternative to preserve the chilies. They found this solution to be smoking, the same principle that works well with meat and fish.

How do you use Chipotle correctly?

The specialty here is the smoky flavor, coupled with a pleasant heat. Many Mexican dishes are traditionally seasoned with chipotle. But also, in the TexMex kitchen of the US Southwest Chipotle is often used. Many chilli con carne recipes, for example, include chipotle. With us, this chilli product is becoming increasingly popular, because you can taste so much "smoky-spicy" without having to cook the same smoked meat, which is also often fat. Chipotle is therefore also ideal for the vegetarian cuisine. The many advantages of Chipotle and the unique taste have made this ingredient to be highly used in top restaurants. In which dishes you can use the smoked chilies depends, among other things, on which of the different chipotle products you would like to use. Chipotle you get either grounded as a powder, dried loose, whole or in the form of deliciously matched sauces. For example, the powder is ideal for seasonings, whereas a whole pod, it is ideal for soups and stews, as it can be easily removed again. However, if you want to crush the whole chipotles yourself, you should pay attention to a few points. For example, you should use mills or mortars exclusively for this purpose. The whole pods are also often processed dehydrated, and water is added to the chilies again. To achieve the desired result, the chilies are placed in lukewarm water for about half an hour. In this way, they can be processed easier later.

A classic is Chipotles in Adobo sauce!

Chipotles are, as already mentioned, used in many dishes. One, especially in Mexico, widespread way to use the chipotles in the kitchen are Chipotles in Adobo sauce. The Adobo sauce is a special, viscous tomato sauce, which is refined with vinegar and other ingredients. The Adobo sauce is often used in Mexican cuisine as a universal condiment. Due to the chilli, which are stored in the sauce, the adobo sauce tastes spicy-hot. The Chipotles, on the other hand, are often served as a fiery accompaniment to the main courses or used as an ingredient in such. The application of the smoky chipotles in Adobo sauce is very versatile, especially in the TexMex kitchen, so this classic is indispensable in any supermarket in the region.

A short recap:

The name Chipotle comes from the Aztec word Pochili. The South American primitive people called these smoked chilies more than 9000 years ago. The reason why the ripe pods are smoked at all is the consistency of the chilies. Especially meaty and thick-walled varieties, like the jalapeños, are not good for air drying. For this reason, the pods are smoked in underground smoker, even partially today. For smoking Mesquite and Pecan wood were traditionally used. However, it is very difficult to make good chipotles yourself, so there is a wide variety of products on the market. A great assortment, with all-natural offers, you will find for example in our shop. There we have put together a variety of Chipotle based options, for example as a powder, as a loose pod or in a delicious Adobo sauce for you. Even spicy hot sauces with the certain smoky flavor of the Chipotles you will find there. The Chipotles are not only in the Mexican kitchen, but also in the US Southwest used. Even the gourmets of top gastronomy are increasingly discovering the fiery Chipotles for themselves. Not least because of the diversity of the Chipotles, you can use the smoked pods in a variety of recipes. Some fiery creations have been published on our website as an incentive. We wish you a lot of fun cooking or inventing your own recipes with Chipotle.
