Just like real champagne comes only from the Champagne region, the Piment de Espelette is for centuries produced only in the region surrounding the small village of Espelette in the Basque region of south western France. The moderately hot Chilis are an important ingredient for regional traditional dishes such as 'Piperade' and 'Axoa d'Espelette'. Perfect for fish dishes, grilled meat and for sauce seasoning. It can also work wonders in a simple omelet or fried egg! Similar to Mexico, the chilis are air dried in a moderate climate. After this they are ground to a powder that distinguishes itself through the orange red color, a medium hot and very aromatic taste. It is very hard to find outside of the Basque country and a true rarity of the gourmet kitchen. Important: if you want to be 100% sure that you are getting original Piment d'Espelette (AOC) please pay attention to the original packaging with the AOC badge - as of the 2011 crop with 'AOP' badge! From us you are getting only original packaging with the respective badge. Directly from the producer in Espelette!
