Pimentón de la Vera flake mill - hot
These smoke-dried Pimenton de la Vera peppers are a very special delicacy, produced exclusively in the western Spanish province of Extremadura. Just as Roquefort cheese must come from Roquefort and real champagne from Champagne, Pimenton de la Vera enjoys regional trademark protection.
In October and November the ripe fruits are hand-picked and harvested. From the fields in the province the peppers are brought directly to the smoking houses of the farmers. There they are dried in the traditional way on holm oak or oak smoke. After 15 days the pods are smoke-dried accordingly and have their typical aroma.
In Spain, pimenton de la Vera is used to season sausages and meat products (e.g. chorizo). The practical flake mill can be used to season almost anything. Generally it also enhances the taste of fish and vegetarian dishes. The latter can also be used to give a meatless, delicate smoked flavour.
