You can buy mustard in the different variations: as whole seeds (so-called mustard seeds), grounded as mustard powder and in the most common variant as seasoning paste. Mustard is pure pleasure, but nowadays mustard is also available in a variety of combinations with other products, such as chilli.

Where does the mustard come from?

Over 3000 years ago the Chinese were already seasoning with mustard. Later, the mustard came to Europe, around the 4th century BC. At that time mustard was known here but, still only as a remedy especially in monasteries. In addition to its healing properties, mustard has also been used as a preservative for meat and for disinfecting other foods. At that time, however, there were no hot spices such as peppers and chilli, so that mustard soon outgrew its "original tasks". Mustard became increasingly popular with European chefs and was soon recognized as a spice, as it had long served in Asia. Nowadays, you can buy regular mustard in every supermarket. But if you want something special, then you've come to the right place. Mustard is obtained from - what else could it be - the mustard plant. Like horseradish and wasabi, this belongs to the genus of the cross-flower family (lat. Brassicaceae). The mustard gets its heat from so-called volatile mustard oils, the isothiocyanates. For the production usually the white and black mustard seeds are differentiated and used accordantly. By the way: if you eat the mustard seeds, you will be disappointed, because mustard unfolds its typical taste and the typical heat only in combination with water and vinegar. Glycoside Sinalbin is the main flavoring agent of yellow mustard, while black mustard is allyl mustard oil. This is for the heat which rises and you can feel it already in your nose, when you smell it. Depending on the processing, a mix of mustard varieties arises. Classic mustard can be distinguished in sweet, medium and hot. But this distinction does not do justice to mustard. Today you can buy many kinds of mustard, such as Dijon mustard, Rotisseur mustard and tarragon mustard.
