The Jalapeno Chili is the Classic for all types of TexMex dishes: Chili con Carne, Salsa, Moles, Dips etc. (ex. The Nachos classic 'Chile con Queso'-)
Remove the seeds from the pod, fill in or wrap the Jalapeno in Bacon (use a toothpick to secure the Bacon to the Jalapeno) and done. Then put the Jalapeno on the grill until the bacon is crispy... *hmmmm* ideally with Chili-Rack so that the Jalapenos don't top over and the cheese does not pour outside!
