The Jalapeno Chilli is the classic for all sorts of dishes that are typical to the TexMex kitchen: Chili con Carne, Salsa, Moles, Dips etc. (ex. The Nacho Classic "Chile con Queso")
For us the Classic Barbeque from the grill is top: Filled Jalapenos with Bacon. Free the Jalapeno pod from all the seeds, fill with fresh cheese, then wrap the entire Chilli with bacon (use a toothpick to secure the bacon to the Chilli) and you are done. Finally put it on the grill until the bacon is nice and crunchy. Ideally use with Chili-Rack, so that the Jalapenos do not fall over and that the Cheese stays inside the Jalapeno.
