The Jalapeno chilli is the classic for all sorts of TexMex dishes: chili con carne, salsas, moles, dips etc. (eg. the nacho classic 'Chile con Queso' (German language)
We have regularly the BBQ grill classic: Stuffed Jalapenos with ham. Free the jalapeno pod of kernels, stuff it with cream cheese, cover the whole pod once with bacon or ham (a toothpick to fix the bacon), ready. Then on the grill with it, until the bacon is deliciously crispy ... * hmmm * - ideally with chilli rack, so that the Jalapenos do not fall over and the cream and cheese runs out!

Delicious and long lasting these Jalapenos pickled in Craft Beer!
Ingredients:
400g Jalapenos
20 - 30 mini onions
1 cup craft beer
1 cup apple cider vinegar
3 tablespoons brown sugar
2 tablespoons salt
1 tablespoon of black peppercorns
(1 cup = approx. 200 ml, 1 tablespoon = 1 heaped tablespoon)
Instructions:
Wash the Jalapenos and cut into strips.
Skin the onion and layer the two in a preserving jar.
In a saucepan, add the beer, vinegar, sugar, salt and peppercorns over medium heat, stirring until sugar and salt have dissolved.
Pour the broth over the jalapenos.
Close the lid firmly and turn the glass upside down for a few minutes.
Put the whole thing in the refrigerator for 24 hours.
When properly stored, the Jalapenos will last for several weeks.
