Ground Piment d' Espelette

Just like real champagne comes only from the Champagne region, the Piment de Espelette is for centuries produced only in the region surrounding the small village of Espelette in the Basque region of south western France. The moderately hot Chilis are an important ingredient for regional traditional dishes such as 'Piperade' and 'Axoa d'Espelette'. Perfect for fish dishes, grilled meat and for sauce seasoning. It can also work wonders in a simple omelet or fried egg! Similar to Mexico, the chilis are air dried in a moderate climate. After this they are ground to a powder that distinguishes itself through the orange red color, a medium hot and very aromatic taste. It is very hard to find outside of the Basque country and a true rarity of the gourmet kitchen.
