Tasmanian pepper, for example, develops an intense spiciness that goes well with all game and meat dishes.
The real red Kampot pepper also goes well with meat, but beware: the red berries are the ripest and therefore the sharpest.
Andaliman pepper tastes slightly citrus and is therefore also called "lemon pepper". This fruity note naturally goes well with fish or seafood.
