Here it becomes clear, how hot habaneros can be. When you try it raw, the sauce cuts itself perfectly into the palate, but at the same time you can taste a special feature: Before they get into the saucepan, the habaneros are freshly smoked on the spot! The whole thing is nicely rounded up with tomatoes and just a little bit of garlic. Really smooth with(almost) everything.
If you only have a few sauces in the fridge, this one should be one of them – it has the stuff to be a true classic! A perfect chili con carne gets a nice “fire” from it, the pasta sauce gets the right “kick” and it also spices up barbecue sauces really nicely.
One of our favorites, tasted at the Fiery Foods & Barbecue Show 2009
