Who invented it? The Portuguese were!

Portugal was one of the largest naval powers in the 15th and 16th centuries and sent its merchant fleet to all the gentleman countries. The chilies discovered in the New World quickly became an interesting commodity and were distributed around the world. Of course, it did not take long and the hot fruits under the name Piri Piri soon enjoyed in their own country more and more popularity.

What is Piri Piri?

Among other things, the Portuguese sailors brought pea-sized fiery chillies to Africa, where they got the name "Piri-Piri" (sometimes also Peri-Peri or Pili-Pili), which translates roughly as "pepper-pepper". In Africa, the current Birdeye chillies developed, which are cultivated extensively, especially in Malawi and Zimbabwe. The Portuguese took the name home and it was introduced to the language, as a general name for spicy and small-chili peppers. Over time, the name "Piri-Piri" has become commonplace for chilis-made products and whole dishes.

Quinta d'Avó - Masterful Piri-Piri

Quinta d'Avó means "grandmother's farm" and just as traditional are the natural spicy sauces, spicy pastes and salty marinades. Many steps are still carried out carefully by hand and ensure a high gastronomic level.

The family-owned company MAROVINA, based near Lisbon in Portugal, has been a leader on the Portuguese market since 1988 with its Quinta d'Avó Piri Piri products. In addition to the original Piri Piri sauce and the world-renowned Portuguese chicken Piri-Piri, Marovina blends innovation with tradition to create full-bodied new sauces, such as the spicy Piri Piri chutney or the sweet Piri Piri honey sauce and the hearty Africa pura sauce.

The selection leaves nothing to be desired and brings the customer always new taste experiences on the table. The fact that people are passionate about their work is evident in the sophisticated recipe of the sauces, pastes and marinade. At the same time, emphasis is always placed on a holistic approach to use. Thus, all products both before cooking as e.g. Rub - while cooking for seasoning - and after cooking for garnishing an absolutely delicious highlight.

Quality is handmade

Specializing in Piri Piri, Quinta d'Avó sauces accumulate all the know-how from cultivation to production and the experience that really matters to taste. Or as the company puts it: "We really want to keep it small and great".

So the selection starts already on the fields. The Piri Piri are freshly harvested and filled into coarse-mesh bags. Before processing, the Piri-Piri pods are transported in a sophisticated car wash by a rotating screw conveyor made of stainless steel directly into the hall. The small fire pods are layered with salt and then weighted - as it has been for generations.

The preservation does not take place by boiling, but by fermentation and the appropriate concentration of salt. However - and that is one of the reasons why the Quinta d'Avo sauces taste so intense - the proportion of chili is considerably higher than typical mass sauces.

The very fine Piri Piri puree is then refined according to the secret recipes with vinegar, lemon juice and other ingredients. Quinta d'Avó proudly does not use any additives to preserve the original enjoyment as a whole.
