Where did this Cobb Grill come from anyway?

Cobb barbecues were originally invented by a team of Scandinavians. Conversely, however, it wasn’t built with snowy tundras in mind: It was designed explicitly for use on the warmer southern coasts of South Africa. The team of engineers was hired by the South African government to develop a cooking implement that reduces the risk of fires in the various ‘informal’ communities throughout the country. Constructed from highly flammable materials, these settlements pose a major fire risk. And with South African cuisine comprising lots of barbecuing, it’s a risk that’s tough to avoid. That’s why the inventors of Cobb barbecues were given simple instructions: Create an implement that affords all the advantages of cooking over an open fire while mitigating the exceptional fire risk such a feature poses. The result? Cobb barbecues combine the latest technology to produce a grill that isn’t hot to the touch, omits no explosive flames and reduces fumes. How is a Cobb barbecue put together?

Inside the BBQ, you’ll find a small grate for briquettes. This works as a burn basket of sorts, in which you should lay around 12 briquettes for maximum efficacy. That being said, temperatures of around 180° Celsius can be reached even by using only half that amount. Above the burn basket, you can then lay the grill plate. Lined with teflon, the plate itself can be used for a variety of uses, be it frying, grilling or baking and comes with a series of grooves so that excess fat can run off easily into a specially designed channel and doesn’t fall into the blaze underneath. This way, any excess fumes are also mitigated and the flames don’t rise and fall as unpredictably as with other grills. But how come the casing of the BBQ doesn’t get hot despite internal temperatures of up to 300° Celsius? This interesting development is down to the way the BBQ is constructed. Inside the burn basket, a silicon meshing isolates the outer casing from the heat inside, while the stainless steel lid reflects the heat back into the basket. In this sense, Cobb barbecues can be (carefully) picked up and moved mid-barbecue, with small rubber legs ensuring that it’ll always stand securely when placed back down. The barbecues can also be put together quickly and weigh very little. The most important components of the Cobb barbecues are:

Gas Cobb barbecues

  • Big cuts of meat won’t fit.
